The Rogelio Family’s Temple of Enchiladas
Chips and salsa are a young man's game. A 12-year-old version of myself could eat a basket of chips, then another, and finish an entree without breaking for a sip of water. I still could, I think, but better not to try if I have other obligations that night—or the next morning. So you won’t find me taking down Tostitos pre-meal. But hot, fresh homemade chips and salsa—well that’s a different ballgame.
Taqueria Mexico was originally opened by the Rogelio family in 1992 on Prospect Street in Waltham, and has been a neighborhood staple—for my own family at least—for decades. It’s since moved to Charles street, and been passed on to the grandson of the owners, Carlos. The quality of food hasn’t missed a beat.
Enchiladas are best when they’re leaky. Meaning, no matter how you wrap them, the bag is going to end up soaked through with a mixture of sauce, grease and love. You can triple wrap them, extra box them, and their bag will still end up wet. Hell, you could lock them up in Shawshank State prison, and the grease would spend twenty years digging through layers with a spoon. Grease and love are an unstoppable force.
